Today I was on a hike with Eric and he looked over at me and asked “can noodles be the base of a Buddha bow?”
“Sure,” I said “its basically: carb base, veggies and a sauce or dressing”
“Lets eat a lot of vegetables” he responded.
So my brain began to formulate our bowls.
We hit 10,000 steps at the end of our hike! So amazing, but I was starving.
Bowl ingredients
- Udon Noodles
- Zoodles
- Braised Red Cabbage
- Roasted asparagus
- Roasted carrots
- Steamed broccoli
- Dragon sauce
Miso Ginger Wasabi Dressing
- 1/4 cup of Miso
- 1/4 Cup of rice vinegar
- 1/4 cup of water
- Juice of 1/2 a lemon
- 1 tablespoon of ginger
- 1 clove of garlic
- 1/2 teaspoon of wasabi
Blend the above ingredients until smooth.
